Place all ingredients, expect cock, in a large pot or wok. Simmer gently until sugars are dissolved.
Add cock, breast-side down. Add filtered water to cover, raising heat to bring to gentle boil.
At boil, reduce heat to low, cover and simmer for one hour or until meat is tender.
Lift cock out of sauce to serving platter. Cut into serving pieces. Remove 1/4 cup of remaining sauce from pot. Taste for saltiness. If too salty,dilute with hot water.
Serve cock over steamed brown rice with sauce on side.
