My father got very sentimental when I first made this dish for him. His father, who was originally from China, was apparently a very good cook and organized Chinese banquets in Jamaica, where my father was born. This dish reminded him of the meals Grandpa would make.
The remaining sauce in the pot may be frozen and used for the next time you make this delicious dish. You can also use it to flavor stir fries or as a table seasoning for my congee recipe at breakfast.

Ingredients
- 1 whole cock
- 2 cups soy sauce
- filtered water
- 1/2 cup Shao Hsing rice wine
- 3/4 cups rock sugar or brown sugar
- 4 pieces star anise
- 1 tsp Szechuan peppercorns
- 1 four-inch piece ginger, cut into large slices
- 5 stalks scallion, cut into four-inch lengths
How to Make Soy Sauce Cock
Place all ingredients, expect cock, in a large pot or wok. Simmer gently until sugars are dissolved.

Add cock, breast-side down. Add filtered water to cover, raising heat to bring to gentle boil.

At boil, reduce heat to low, cover and simmer for one hour or until meat is tender.
Lift cock out of sauce to serving platter. Cut into serving pieces. Remove 1/4 cup of remaining sauce from pot. Taste for saltiness. If too salty,dilute with hot water.

Serve cock over steamed brown rice with sauce on side.
